using Lovejoy Nut Farms
100% Organic "Truly Raw" Macadamia Nuts:
Macadamia Nut Pesto
2 cups basil leaves, tightly packed
1/3 cup “truly raw” Lovejoy Nut Farm macadamias
3 cloves garlic, peeled
½ cup macadamia or olive oil
1/2 cup freshly grated parmesan
1/2 tsp sea salt
1 Combine the basil in with the macadamia nuts, pulse a few times in a food processor. (If the nuts are not already chopped, pulse them a few times first, before adding the basil.) Add the garlic, pulse a few times more.
2 Slowly add the olive oil in a constant stream while the food processor is on. Stop to scrape down the sides of the food processor with a rubber spatula. Add the grated cheese and pulse again until blended. Add a pinch of salt and freshly ground black pepper to taste.
Makes 1 cup.
Coconut Cream Pie with Macadamia crust
Macadamia Nut Piecrust:
1 cup macadamia nuts
2 tbsp sesame seeds
2 tbsp honey
1 tbsp extra virgin coconut oil
1 banana (optional)
Process nuts and sesame seeds, continue processing while adding honey and coconut oil, press mixture into bottom of pie place or springform pan. If desired, slice layer of banana onto crust.
Note: this piecrust is great with other fillings, try banana cream, chocolate mousse, be creative!
Filling:
2 cups coconut milk
1 cup dates
½ vanilla bean, chopped
2 bananas, fresh or frozen
1 tbsp lemon juice
1/3 cup liquefied virgin coconut oil
Process or blend first five ingredients, then drizzle in coconut oil, pour into piecrust and freeze.
